Turkey Thaw Time Calculator

Start thawing at the right time so your turkey is ready and safe.

How it is calculated

The weight in kilograms is converted to pounds with lb = kg × 2.20462, because the thawing rules are written in pounds. Refrigerator time is lb ÷ 4 × 24 hours, which is 24 hours per 4 lb, and the same figure is shown in days by dividing by 24. Cold-water time is lb × 0.5 hours, which is 30 minutes per lb, with the water changed every 30 minutes. Days and cold-water hours are shown to one decimal, fridge hours rounded to whole hours. The weight must be from 0.1 to 40 kg; a smaller or larger value shows no result. The tool gives both durations at once rather than a start date, so you subtract the time from the hour you want to cook. The cold-water figure assumes a bird sealed in its packaging and fully submerged.

Worked example

A 5 kg turkey. Convert: 5 × 2.20462 = 11.02 lb. Fridge: 11.02 ÷ 4 × 24 = 66.1 hours, which shows as 66 h, or 66.1 ÷ 24 = 2.8 days. Cold water: 11.02 × 0.5 = 5.5 hours. Result: 2.8 d in the fridge (66 h), or 5.5 h in cold water. To cook at 18:00 on a Thursday, count back at least 66 hours and add a margin, so the bird goes into the fridge on Monday morning.

Common mistakes

  • Entering the weight in pounds. The field is kilograms, so typing 11 for an 11 lb turkey describes a bird more than twice as heavy (6.1 days in the fridge instead of about 2.8).
  • Starting the thaw exactly the calculated number of hours before cooking. A bird that is still icy inside needs extra time, so add a margin of at least half a day for the fridge method.
  • Using the cold-water time without changing the water. The 30 minutes per lb figure assumes the water is replaced every 30 minutes and the bird stays sealed and submerged.
  • Mixing up the two results. The fridge time is shown in days and hours, the cold-water time in hours only, and the two are not interchangeable.
  • Counting the cooking time inside the thaw time. The result covers only thawing, so roasting time is on top of it.

About this calculator

A frozen turkey must thaw slowly enough that its surface never sits in the food-safety “danger zone” (above 4°C/40°F) long enough for bacteria to multiply, which is why the USDA’s refrigerator method calls for roughly 24 hours of thawing time for every 4 pounds (about 1.8 kg) of turkey — a 20-pound bird needs a full 5 days in the fridge. The faster alternative, cold water thawing, needs the turkey fully submerged (still in its packaging) in water changed every 30 minutes, at a rate of roughly 30 minutes per pound.

Home cooks planning a holiday meal use this timing to work backward from the meal itself — miscounting thaw days is one of the most common reasons a turkey isn’t ready (or, worse, is thawed unsafely on a countertop) on the day it needs to go in the oven. Refrigerator thawing is the recommended method precisely because it never lets the bird warm past a safe temperature, while cold water thawing is faster but requires active attention to keep the water cold and circulating.
