How it is calculated
Both amounts are percentages of the prepared fruit weight. sugar = fruit × sugar ratio / 100 and pectin = fruit × rate / 100, where the pectin rate depends on the fruit type you choose: low-pectin fruit 2%, medium 1%, high 0% (no added pectin). The batch total is fruit + sugar + pectin. Everything is in grams: pectin to 1 decimal, sugar and total rounded to whole grams. Fruit weight and sugar ratio must be above zero. The total is the weight of the raw ingredients, not the yield after cooking, because boiling drives off water. Pectin products differ in strength, so follow the packet if its dose is different.
Worked example
You have 1000 g of a low-pectin fruit and want a sugar ratio of 75%. Sugar = 1000 × 75 / 100 = 750 g. Pectin = 1000 × 2 / 100 = 20.0 g. Total = 1000 + 750 + 20 = 1,770 g of ingredients going into the pan. If the same weight of high-pectin fruit were used, the pectin would be 0.0 g and the total 1,750 g.
Common mistakes
- Weighing the fruit with stones, stalks or peel on. Weigh the prepared fruit that actually goes in the pot, since the amounts are percentages of that weight.
- Entering the sugar as a number of grams. The field is a ratio in percent of the fruit weight, so 750 g of sugar for 1000 g of fruit is 75.
- Expecting the total to equal the jar yield. It is the raw weight; water boils off during cooking, so you will get less jam.
- Choosing a fruit pectin level by guess. Pick the group (low, medium or high) that matches your fruit, as a wrong choice changes the pectin dose by several grams.
- Using the pectin figure with a product that has its own dose. Commercial pectins vary in strength, so check the packet before adding.
About this calculator
Pectin is the naturally occurring carbohydrate in fruit cell walls that gels jam and preserves when it's heated with sugar and acid — but different fruits contain wildly different amounts of it. High-pectin fruits like apples, citrus, and currants set easily on their own, while low-pectin fruits like strawberries and peaches typically need added pectin (liquid or powdered) to reach a proper set, and the sugar ratio in the recipe affects both the set and the shelf life.
This calculator works out how much pectin and sugar a batch needs based on the fruit's weight, its natural pectin level, and your target sugar ratio. It's a practical aid for home preservers and jam-makers, helping avoid the classic failure modes of runny jam (too little pectin or sugar) or an overly stiff, rubbery set (too much).

The pectin dose depends only on the fruit group, never on the sugar ratio. For 1,000 g of low-pectin fruit the tool gives 20.0 g of pectin at both 50 and 75 percent sugar, with 500 g and 750 g of sugar respectively. That means a reduced-sugar jam may not set the same way, and many pectin products are made specifically for low sugar. Check the packet if you cut sugar. Which fruit and sugar level are you cooking?
