How it is calculated
Fruit weight is entered in grams and the sugar ratio as a percentage of the fruit weight (not of the total). The tool computes sugar = fruit × ratio ÷ 100, batch = fruit + sugar and jars = batch ÷ 350, since it assumes 350 g jars. Sugar and batch are rounded to whole grams and jars to one decimal. If the ratio box is left empty it uses 100% (1:1). A ratio of 0 is allowed; the fruit weight must be above zero and the ratio cannot be negative. The batch weight is simply fruit plus sugar, so water that boils off while cooking is not subtracted.
Worked example
You have 1,500 g of fruit and want a sugar ratio of 70%. Sugar = 1500 × 70 ÷ 100 = 1,050 g. The batch weight is 1500 + 1050 = 2,550 g. Dividing by the 350 g jar size gives 2550 ÷ 350 = 7.29, shown as 7.3 jars. In practice that means 7 full jars plus a little left over, and since the tool ignores evaporation, the finished jam may weigh less than 2,550 g. For comparison, leaving the ratio blank (100%) would call for 1,500 g of sugar.
Common mistakes
- Entering the ratio as sugar to total weight. The percentage is taken from the fruit weight, so 50% means 500 g of sugar for 1,000 g of fruit, a 2:1 fruit to sugar jam.
- Entering fruit weight in kilograms. The field is in grams: typing 1.5 instead of 1500 gives a few grams of sugar and a fraction of a jar.
- Weighing the fruit before stoning, hulling or peeling when the recipe means prepared fruit. Weigh the fruit as it goes into the pot.
- Treating the jar count as exact. It assumes 350 g jars and ignores boiling loss, so round to jars you actually have and keep a spare.
- Cutting the ratio far below 100% without changing the rest of the recipe. The tool only does the arithmetic; how much pectin or acid a lower-sugar jam needs is a decision you make from your recipe.
About this calculator
Traditional high-sugar jam relies on a roughly 1:1 ratio of sugar to fruit by weight — the sugar isn't just for sweetness but works with pectin (naturally present in the fruit or added separately) to set the gel and, combined with the low water activity it creates, helps preserve the jam without refrigeration once sealed. Lower-sugar recipes typically use ratios closer to 2:1 or 3:1 fruit to sugar but need added pectin formulated for reduced sugar to still set properly.
This calculator takes your fruit weight and the sugar as a percentage of that weight (100% is a 1:1 jam, 50% is 2:1 fruit to sugar, about 33% is 3:1; 100% is used if you leave it blank), returns the amount of sugar to add, the total batch weight, and an approximate jar count based on 350 g jars. Home canners and preserving enthusiasts use it to scale a recipe up or down for the amount of fruit they have on hand, whether following a traditional high-sugar formula or a modern lower-sugar one.

The ratio is taken from fruit weight, so the sugar share of the finished batch is smaller than the number you type: at 100 percent, half of the batch weight is sugar; at 70 percent it is about 41 percent. That is the figure to compare when a recipe quotes sugar as a share of the total. What ratio do you use for your favourite fruit?
