Meringue Sugar Ratio Calculator
Enter your egg white count and meringue style to get the sugar amount in grams.

How it is calculated
The tool assumes a large egg white weighs 33 g: whites weight = N × 33 g, where N is a whole number of egg whites. Sugar is then sugar = whites weight × r, with the sugar-to-white ratio r fixed by the style: French 1.5, Swiss 1.75 and Italian 2.0 (sugar grams per gram of white). Sugar and white weights are rounded to whole grams, and the ratio is shown as r : 1. A fractional count of whites, zero, or a negative number gives no result. The 33 g figure is an average, so smaller or larger eggs, or whites you weighed yourself, will shift the amount, and you can rescale by the ratio shown.
Worked example
Five egg whites for a Swiss meringue. Whites weight = 5 × 33 = 165 g. Swiss uses a ratio of 1.75 : 1, so sugar = 165 × 1.75 = 288.75 g, shown rounded as 289 g. If your five whites actually weigh 150 g on the scale, use 150 × 1.75 = 262.5 g instead, because the ratio is what carries over from one batch to the next.
Common mistakes
- Entering the number of whole eggs when you are using only the whites, or a count that includes yolks. The field is the number of whites.
- Assuming one ratio fits every style. The tool uses a higher sugar ratio for Italian than for French, so switching the style changes the sugar even with the same eggs.
- Using the sugar amount for a batch of different-sized eggs without weighing the whites. The tool counts each white as 33 g, so very small or jumbo eggs make it off.
- Entering half a white, such as 2.5. Only whole numbers are accepted, so work from the gram weight and the ratio for partial amounts.
- Measuring the sugar by cups. The result is in grams, and a cup of caster sugar and a cup of granulated sugar weigh different amounts.
About this calculator
Meringue sugar ratios differ by technique: French meringue (raw egg whites whipped with sugar added gradually) uses a sugar-to-white ratio of 1.5:1 by weight — about 50g of sugar per egg white, taking an average large white as 33g. Swiss meringue (egg whites and sugar warmed together over a bain-marie before whipping) uses more sugar, 1.75:1 (about 58g per white), and the heating step dissolves the sugar fully and pasteurizes the whites, producing a denser, glossier result. Italian meringue (a hot sugar syrup cooked to soft-ball stage, around 115-120°C, then streamed into whipping whites) uses the most, 2:1 (about 66g per white), and is the most stable of the three because the cooked syrup partially cooks the egg whites as it's incorporated.
Bakers choose between these three methods based on what the meringue is for: French is fastest and best for baked meringue shells or folding into batters, Swiss is prized for buttercream because of its silky, fully dissolved texture, and Italian is the most stable and heat-tolerant, making it the standard choice for topping a pie that needs to be torched or briefly baked without weeping.
